I’m a mom, a wife, an SEO, a grad student, etc. In short, I’m busy (just like we all are! I know I’m not special), but I want my family to eat healthy (and preferably vegan). When first going vegan back in 2010, I struggled to find simple, quick recipes that didn’t intimidate me AND tasted good. Over the years, I’ve gotten better about finding recipes and foods that use simple, healthy (and affordable!) ingredients and that work for my family and our schedule.
My style for recipe posts will tend to be bare bones. Frankly, I get annoyed when I go to a website and I have to scroll through a novel and close a bazillion pop-ups before I can see the actual recipe. Let’s face it: I’ve got better things to do than write about how much I love tacos or how I face planted on my morning run or how I *might* use ellipses a little TOO often, and you’ve got better things to do than read all that. Let’s just do what we’re here to do: get the recipe and get cooking!
